What does a serving of almonds look like? Plus 4 Almond Recipes

I just recently returned from the annual Food and Nutrition Conference and Expo (FNCE) hosted by the Academy of Nutrition and Dietetics (AND). This is one of my favorite events that I attend all year because there are tons of educational sessions for Registered Dietitians on the latest research and best practices in the field. There is also a giant expo hall filled with food, nutrition and product vendors displaying their products. Some of these I could truly do without at the conference, such as Coca Cola and Monsanto, and I make wide circles around those booths, however those are far out numbered by the quality products available. One of my favorites is the California Almond Board’s booth because they always have awesome recipes and nutrition education handouts about, of course, almonds!

Portion control is KEY though so take a look at this visual to see how much you are really eating:

A 1-ounce serving of almonds has the following:

160 calories,

14 grams of fat (13g unsaturated, 1 g saturated)

6 grams of carbohydrates

3 grams of fiber

6 grams of protein

NO cholesterol (FYI: cholesterol is found in animal products, not plant)

NO sodium (unless the almonds are salted)

200 milligrams potassium

1 gram of sugar

8% Calcium

6% Iron

35% Vitamin E

4% Folate

20% Magnesium

15% Phosphorus
